  • 1 medium onion, roughly chopped
  • 2 cloves garlic, peeled (no need to chop)
  • 1 liter vegetable broth (or chicken broth for a richer flavor)
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Salt and pepper, to taste
  • 1 tbsp olive oil or butter (optional)
  • Optional garnishes: fresh parsley, crème fraîche, or toasted pumpkin seeds

Instructions:

Prepare the Ingredients:
  • Peel and cube the pumpkin into roughly 1-inch pieces.
  • Peel and chop the carrots into similar-sized pieces.
  • Roughly chop the onion and leave the garlic cloves whole (no need to mince them).
Add Ingredients to the Soup Maker:
  • Place the chopped pumpkin, carrots, onion, and garlic cloves into the soup maker.
  • Pour in the vegetable broth, making sure all the ingredients are submerged.
Season the Soup:
  • Add the ground cumin, coriander, cinnamon, nutmeg, salt, and pepper.
  • If using olive oil or butter, drizzle it over the ingredients to add extra flavor.
Select the Soup Maker Settings:
  • Close the lid securely and let the soup maker work its magic.
  • Choose the “Smooth” mode on your soup maker and press the "START" button.
  • The soup maker will automatically blend and heat the ingredients into a smooth, creamy soup.
Taste and Adjust:
  • After about 30 minutes, when the soup is ready, open the lid and give it a stir.
  • Taste the soup and adjust the seasoning with more salt, pepper, or spices if needed.
Serve:
  • Ladle the soup into bowls and garnish with fresh parsley, a dollop of crème fraîche, or toasted pumpkin seeds for added flavor and texture.
  • Serve hot and enjoy your delicious homemade carrot and pumpkin soup!

Tips:

  • No chopping garlic: Since the soup maker will blend everything, there’s no need to finely chop the garlic cloves. This saves time and effort.
  • Customize spices: Feel free to adjust the spices according to your taste preferences. Adding a pinch of red pepper flakes can give the soup a nice kick.
  • Leftovers: This soup can be stored in the refrigerator for up to 3 days or frozen for future meals.
