Ingredients:

  • 400g lean ground beef
  • 3 large carrots, peeled
  • 3 cloves of garlic
  • 1 piece of ginger (about 2 inches long)
  • 3 green onions
  • 2 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper powder
  • 1 tablespoon sesame oil
  • 1 egg
  • 50-60 dumpling wrappers
  • A little water for sealing the dumplings

Equipment:

  • Food processor
  • Large mixing bowl
  • Spoon or spatula
  • Steamer or large pot for boiling

Instructions:

Step 1: Prepare the Vegetables in the Food Processor

Place the peeled carrots into the food processor. Pulse several times until the carrots are finely shredded. Transfer the shredded carrots to the large mixing bowl.

Step 2: Mince the Aromatics

Put the garlic cloves, ginger piece, and green onions into the food processor. Pulse until they are minced into small pieces. Add these minced ingredients to the mixing bowl with the shredded carrots.

Step 3: Process the Ground Beef

Put the lean ground beef into the food processor. Pulse a few times to break up any large chunks and make the texture more uniform. Transfer the processed beef to the mixing bowl.

Step 4: Season and Mix the Filling

Add the light soy sauce, dark soy sauce, oyster sauce, salt, white pepper powder, sesame oil, and egg to the mixing bowl. Use a spoon or spatula to stir the ingredients in one direction. Keep stirring until the filling is well combined and has a sticky texture.

Step 5: Make the Dumplings

Take a dumpling wrapper and place it on your palm. Put about 1 tablespoon of the beef and carrot filling in the center of the wrapper. Dip your finger in a little water and moisten the edges of the wrapper. Fold the wrapper in half to form a semi-circle and press the edges together firmly to seal the dumpling. You can also create pleats along the edge for a more decorative look. Repeat this process until all the filling is used up.

Step 6: Cook the Dumplings

There are two common ways to cook the dumplings. For boiling, bring a large pot of water to a boil. Gently add the dumplings to the boiling water, stirring gently to prevent them from sticking to the bottom of the pot. Cook for about 5-7 minutes or until the dumplings float to the surface and are cooked through. For steaming, place the dumplings in a steamer basket lined with parchment paper or a steamer cloth. Steam over boiling water for about 10-12 minutes.

Tips for Making Beef and Carrot Dumplings with a Food Processor:

  • Don't over-process the ingredients in the food processor. Pulse in short bursts to maintain some texture in the filling. For example, when processing the carrots, you want them shredded but not turned into a puree.
  • If the filling seems too dry after mixing, you can add a little more sesame oil or a splash of water to make it more cohesive.
  • When sealing the dumplings, make sure the edges are properly sealed to prevent the filling from leaking out during cooking.
  • You can make a large batch of the dumplings and freeze them for later use. Just place the uncooked dumplings on a baking sheet lined with parchment paper and freeze until solid. Then transfer them to a freezer bag. When you want to cook them, you can cook them directly from frozen, adding a little extra cooking time.
  • Experiment with different seasonings and spices to customize the flavor of the filling according to your taste preferences. For example, you can add a little chili powder for a spicy kick.
