Ingredients
- 2 cooked chicken breasts (you can boil, bake or grill them in advance)
- 4 cups of mixed salad greens (such as lettuce, spinach, arugula)
- 1 cup of cherry tomatoes, halved
- 1/2 cup of celery, chopped
- 1/4 cup of red onion, chopped
- 1/2 cup of blue cheese crumbles
- 1/4 cup of buffalo hot sauce
- 2 tablespoons of unsalted butter, melted
- 2 tablespoons of ranch dressing (optional)
- Salt and black pepper to taste
Equipment
- Food Processor
- Large mixing bowl
- Cutting board
- Knife
Instructions
Step 1: Prepare the chicken in the food processor
Place the cooked chicken breasts into the food processor. Pulse the chicken several times until it is shredded into small pieces. You can adjust the number of pulses according to how fine or coarse you want the chicken shreds to be. Transfer the shredded chicken to a large mixing bowl.
Step 2: Make the buffalo sauce
In a small bowl, combine the melted butter and buffalo hot sauce. Stir well until they are fully mixed. Pour the buffalo sauce over the shredded chicken in the mixing bowl. Toss the chicken gently to ensure that it is evenly coated with the sauce.
Step 3: Prepare the remaining vegetables
Using a knife and cutting board, chop the celery and red onion as described in the ingredients list. Halve the cherry tomatoes. Add these chopped vegetables and the halved cherry tomatoes to the mixing bowl with the chicken.
Step 4: Assemble the salad
Add the mixed salad greens to the bowl. If you like, you can also add a couple of tablespoons of ranch dressing at this time to make the salad creamier. Season with salt and black pepper to taste. Gently toss all the ingredients together until they are well combined.
Step 5: Garnish and serve
Sprinkle the blue cheese crumbles over the top of the salad. Transfer the Buffalo Chicken Salad to serving plates and enjoy immediately.
Tips for Making Buffalo Chicken Salad
- Chicken preparation: For more flavor, you can marinate the raw chicken breasts in a bit of buffalo sauce or your favorite spices before cooking them. And make sure the chicken is fully cooked and cooled down before shredding it in the food processor.
- Spiciness level: Adjust the amount of buffalo hot sauce according to your preference for spiciness. If you don't like it too spicy, you can reduce the amount of hot sauce or choose a milder variety.
- Cheese substitution: If you don't like blue cheese, you can substitute it with feta cheese, shredded cheddar, or any other cheese you prefer.
- Freshness: Use fresh and crisp salad greens for the best texture and flavor. Wash and dry the greens thoroughly before using them in the salad.
- Storage: If you have leftovers, store the salad in an airtight container in the refrigerator. However, the salad greens may wilt a bit, so it's best to consume it as soon as possible for the best quality.
