Instructions:
Step 1: Prepare the Crust
- Place the graham crackers in the Homtone 16 cup food processor. Use the "Pulse" function to crush the crackers into fine crumbs. You can also use the stainless steel S-blade for this process.
- Add the 1/4 cup of granulated sugar to the food processor with the graham cracker crumbs. Pulse a few times to combine.
- With the food processor running on a low speed (setting "1"), slowly pour in the melted butter through the feed chute until the mixture is well combined and resembles wet sand.
- Line the bottom of a 9-inch springform pan with parchment paper. Pour the graham cracker crust mixture into the pan and press it firmly and evenly onto the bottom and about 1 inch up the sides of the pan. Use the back of a spoon or a flat-bottomed glass to press it down.
- Refrigerate the crust while you prepare the filling.
Step 2: Make the Cheesecake Filling
- In the clean bowl of the Homtone 16 cup food processor, place the softened cream cheese. Use the "1" setting to beat the cream cheese until it is smooth and creamy, scraping down the sides of the bowl with a rubber spatula as needed.
- Add the 1 cup of granulated sugar to the cream cheese in the food processor. Beat on the "1" setting until the sugar is well incorporated and the mixture is light and fluffy.
- Crack the 3 large eggs into a separate bowl and lightly whisk them with a fork. With the food processor running on the "1" setting, slowly pour the whisked eggs through the feed chute one at a time, allowing each egg to fully incorporate before adding the next.
- Add the vanilla extract, sour cream, and all-purpose flour to the food processor. Beat on the "1" setting until just combined. Do not overmix, as this can cause the cheesecake to crack.
- Pour the cheesecake filling over the prepared crust in the springform pan. Smooth the top with a rubber spatula.
Step 3: Bake the Cheesecake
- Preheat your oven to 325°F (163°C).
