Classic Gumbo (Using Soup Maker Only)

Ingredients:

  • 1 tbsp olive oil

  • 1/2 cup diced onion

  • 1/2 cup diced celery

  • 1/2 cup diced green bell pepper

  • 2 cloves garlic, minced

  • 1/2 lb smoked sausage (such as andouille or kielbasa), sliced

  • 1 cup sliced okra (fresh or frozen)

  • 1 (14.5 oz) can diced tomatoes, undrained

  • 4 cups chicken broth

  • 1/2 tsp dried thyme

  • 1/2 tsp smoked paprika

  • 1/4 tsp cayenne pepper (optional, for heat)

  • 1 bay leaf

  • Salt and black pepper to taste

Instructions:

  1. Sauté the Vegetables (Reheat Mode):

    • Add olive oil, onion, celery, bell pepper, and garlic to your Soup Maker.

    • Select the "Reheat" function and set it for 10 minutes. Stir occasionally with a heat-resistant spatula to soften the vegetables.

  2. Add Sausage and Spices:

    • After the vegetables are softened, add the sliced sausage, thyme, smoked paprika, cayenne pepper (if using), and bay leaf.

    • Use the remaining 10 minutes of the Reheat function to lightly brown the sausage and release its flavors.

  3. Cook the Gumbo (Chunky Mode):

    • Add the okra, diced tomatoes, and chicken broth to the Soup Maker.

    • Select the "Chunky" function and let it cook for 28 minutes. This will allow the okra to soften and the flavors to meld together.
