Ingredients:

  • 1/2 eggplant: Cut into 1-inch cubes (approximately 2 cups).
  • 1 zucchini: Sliced into 1/2-inch thick rounds.
  • 1 bell pepper: Any color, chopped into 1-inch pieces.
  • 2 tablespoons olive oil: For tossing the vegetables and helping the seasonings adhere.
  • Salt and pepper: To taste, for seasoning.
  • Italian herbs: Such as dried basil, oregano, and thyme, about 1 teaspoon total.

 

Equipment:

  • Homtone pizza oven with roast function.
  • Enamel baking tray that fits within your oven.
  • Large mixing bowl.
  • Tongs or oven mitts for handling hot trays.
  • Serving plate.

 

Instructions:

Step 1: Prepare the Vegetables
Preheat the Oven: Set your oven to the ROAST function at 425°F (220°C).
Cut the Vegetables: Prepare the eggplant, zucchini, and bell pepper as specified above.

Step 2: Season the Vegetables
In a Mixing Bowl: Combine the cut vegetables.
