Ingredients:
- 2 lbs beef chuck roast: A smaller cut to cook more evenly.
- 1.5 tbsp olive oil: For searing the roast and adding flavor.
- Salt and pepper: To taste, for seasoning.
- 1.5 carrots, chopped: Into 1-inch pieces to fit within your oven.
- 1.5 potatoes, quartered
- 1 onion, sliced: Thinly sliced for even cooking.
Equipment:
- Homtone compact pizza oven with roast function
- Roasting pan or enameled baking tray
- Wire rack (to elevate the roast for even cooking)
- Tongs or oven mitts for handling hot trays
Instructions:
Step 1: Prepare the Roast
Season the Roast: Pat the beef roast dry with paper towels and season generously with salt and pepper on all sides.
Preheat the Oven: Set your oven to the ROAST function at 350°F (175°C).
Step 2: Sear the Roast
Heat Oil in a Pan: In a pan that fits in your oven, heat the olive oil over medium-high heat.
Sear the Roast: Sear the roast on all sides until it develops a nice brown crust, about 3-4 minutes per side.
Transfer to Roasting Pan: Place the seared roast in your roasting pan or enameled baking tray.
Step 3: Prepare the Vegetables
Toss Vegetables with Oil: In a large bowl, toss the chopped carrots, quartered potatoes, and sliced onion with a little olive oil and season with salt and pepper.
Arrange Vegetables: Scatter the vegetables around the roast in the roasting pan.
Step 4: Roast the Roast and Vegetables
Roast: Place the roasting pan with the roast and vegetables in the oven. Roast for about 2-2.5 hours, or until the internal temperature of the roast reaches 145°F (63°C) for medium-rare.
Baste: Baste the roast with the pan juices every 30 minutes to keep it moist.
Step 5: Check and Serve
Check for Doneness: Use a meat thermometer to check the internal temperature of the roast.
Rest: Once cooked, remove the roast and vegetables from the oven and let them rest for about 10 minutes before serving to allow the juices to redistribute.
Serve: Transfer the roast and vegetables to a serving plate and enjoy.
Tips for Pot Roast:
- Size Matters: Adjusting the size of the roast and vegetables ensures they fit comfortably in your oven and cook evenly.
- Elevation: Using a wire rack elevates the roast, promoting even cooking and crispier skin.
- Basting: Basting during cooking helps keep the roast moist and flavorful.
- Rest Time: Always let roasted meats rest before serving to ensure the best texture and flavor.
