Ingredients:

  • 1.5 lbs chicken pieces: Using pieces like chicken thighs and drumsticks works well and fits better in a compact oven. You can trim any excess fat.
  • 1.5 tbsp olive oil
  • 0.5 tsp dried thyme
  • 0.5 tsp dried rosemary\]Salt and pepper: To taste

 

Equipment:

  • Homtone compact pizza oven with roast function
  • Roasting pan or enameled baking tray
  • Wire rack
  • Tongs or oven mitts for handling hot trays

 

Instructions:

Step 1: Prepare the Chicken
Prepare the Chicken Pieces: If using a whole chicken, cut it into pieces that can fit comfortably in your oven. Thighs, drumsticks, and breasts work well.
Pat Dry: Pat the chicken pieces dry with paper towels to ensure the seasonings adhere well and the skin crisps up.

Step 2: Season the Chicken
In a Mixing Bowl: Combine the olive oil, dried thyme, dried rosemary, salt, and pepper.
Toss the Chicken: Add the chicken pieces to the bowl and toss to coat evenly with the seasoning mixture.

Step 3: Prepare the Roasting Pan
Place a Wire Rack: Position a wire rack inside your roasting pan or enameled baking tray. This helps the heat circulate around the chicken, ensuring even cooking.
Arrange the Chicken: Place the seasoned chicken pieces on the wire rack, ensuring they are not overcrowded and have space around them for heat circulation.

Step 4: Roast the Chicken
Preheat the Oven: Set your oven to the ROAST function at 375°F (190°C).
Cook the Chicken: Place the roasting pan with the chicken in the oven. Roast for about 45 minutes to 1 hour, or until the internal temperature of the chicken reaches 165°F (74°C) when measured with a meat thermometer.
Baste: Baste the chicken with the pan juices every 20 minutes to keep it moist.

Step 5: Check and Serve
Check for Doneness: Use a meat thermometer to check the internal temperature of the thickest part of the chicken without touching bone.
Rest: Once cooked, remove the chicken from the oven and let it rest for about 5 minutes before serving to allow the juices to redistribute.
Serve: Transfer the chicken to a serving plate and enjoy with your favorite side dishes.
