Ingredients:

  • 1 cup (200g) sugar: Granulated sugar works best for sweetness.
  • 1/2 cup (120ml) water: Use cold water for easy mixing.
  • 1/4 cup (60ml) vegetable oil: Any neutral oil like canola or vegetable oil.
  • 2 large eggs: At room temperature for easy mixing.
  • 1 cup (120g) all-purpose flour: Unbleached, for a tender crumb.
  • 1 teaspoon (5g) baking powder: Helps the cake rise evenly.
  • 1 teaspoon (5ml) vanilla extract: Adds a hint of vanilla flavor.
  • 1/2 teaspoon (2.5g) instant coffee: For a burst of coffee flavor.

Equipment:

  • Homtone pizza oven with bake function.
  • Mixing bowls.
  • Measuring cups and spoons.
  • Electric mixer or whisk.
  • 8 or 9-inch round cake pan, greased or lined with parchment paper.
  • Tongs or oven mitts for handling hot trays.
  • Serving plate.

Instructions:

Step 1: Prepare the Wet Ingredients

  1. Combine Wet Ingredients: In a large mixing bowl, whisk together the eggs until they are frothy. Add the water, vegetable oil, and vanilla extract.

Step 2: Prepare the Dry Ingredients

  1. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and instant coffee until well combined.

Step 3: Combine Wet and Dry Mixtures

  1. Add Dry to Wet: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix, which can lead to a tough cake.

Step 4: Prepare the Baking Pan

  1. Prepare Pan: Lightly grease an 8 or 9-inch round cake pan or line it with parchment paper to prevent sticking.

Step 5: Pour and Bake the Batter

  1. Pour Batter: Pour the cake batter into the prepared pan, smoothing the top with a spatula.
  2. Bake: Set your oven to the bake function at 350°F (175°C). This temperature will ensure even baking and a nice crust. Place the pan in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

Step 6: Cool and Serve

  1. Cool: Remove the cake from the oven and let it cool in the pan for 10-15 minutes.
  2. Transfer to a Wire Rack: After 10-15 minutes, transfer the cake to a wire rack to cool completely.
  3. Serve: Once cooled, slice the cake and serve as desired. You can also top with whipped cream or ice cream for extra indulgence.

Tips for Coffee Cake:

  • Coffee Selection: Use instant coffee for convenience. You can also use ground coffee if preferred.
  • Batter Consistency: The batter should be smooth with a few lumps from the coffee.
  • Baking Time: Keep an eye on the cake as it bakes to prevent overcooking. The exact time may vary slightly based on your oven.
  • Storage: Store leftovers covered at room temperature for up to 3 days.
