Ingredients:

  • 4 slices of sourdough bread: Sourdough adds a tangy flavor and a crusty texture.
  • 2 ripe avocados: For a creamy spread.
  • Salt and pepper: To taste, for seasoning the avocado and eggs.
  • 4 eggs: For poaching.
  • Lemon juice: 1 tablespoon, for seasoning the eggs and adding a fresh flavor.

 

Equipment:

  • Homtone pizza oven with toast function.
  • Small saucepan or skillet for poaching eggs.
  • Baking sheet or enameled baking tray that fits within your oven (13.4" x 13.4").
  • Tongs or oven mitts for handling hot trays.
  • Whisk or fork for mashing avocados.
  • Serving plate.

 

Instructions:

Step 1: Prepare the Avocado Spread
Mash Avocados: Peel and pit the avocados, then mash them with a fork or a whisk in a bowl until mostly smooth, with some texture for interest.
Season: Stir in salt and pepper to taste.
Spread: Evenly spread the mashed avocado on each slice of sourdough bread.

Step 2: Toast the Bread
Place in Oven: Arrange the avocado-topped bread slices on your baking sheet or enameled baking tray.
Set: Set your oven to the TOAST function at 350°F (175°C). This temperature will give the bread a nice crunch.
Toast: Put the tray in the oven and toast for 5 minutes, or until the bread is crispy and the avocado is warmed through.

Step 3: Poach the Eggs
Prepare Water: Fill a saucepan or skillet with about 2 inches of water and bring it to a gentle simmer. Add a splash of white vinegar to help the eggs set.
Poach Eggs: Crack each egg into a small bowl. Gently slide each egg into the simmering water. Cook for about 3-4 minutes for a soft poach, or until the whites are set and the yolks are still runny.
Remove Eggs: Use a slotted spoon to carefully remove the eggs from the water.

Step 4: Serve
