Mexican Chili (Using Soup Maker Only)

Ingredients:

  • 1 tbsp olive oil

  • 1/2 cup diced onion

  • 1/2 cup diced bell pepper (any color)

  • 2 cloves garlic, minced

  • 1/2 lb ground beef or turkey

  • 1 (15 oz) can kidney beans, drained and rinsed

  • 1 (15 oz) can black beans, drained and rinsed

  • 1 (14.5 oz) can diced tomatoes, undrained

  • 1 cup corn kernels (fresh, frozen, or canned)

  • 2 cups beef or vegetable broth

  • 1 tbsp chili powder

  • 1 tsp ground cumin

  • 1/2 tsp smoked paprika

  • 1/4 tsp cayenne pepper (optional, for extra heat)

  • Salt and black pepper to taste

  • Toppings: shredded cheese, sour cream, chopped cilantro, avocado, or tortilla chips

Instructions:

  1. Sauté the Base (Chunky Mode):

    • Add olive oil, onion, bell pepper, and garlic to your Soup Maker.

    • Select the "Chunky" function and let it cook for 10 minutes to soften the vegetables.

  2. Brown the Meat:

    • Add the ground beef or turkey to the Soup Maker.

    • Run the "Chunky" function again for another 10 minutes to brown the meat and combine it with the vegetables.

  3. Add Remaining Ingredients:

    • Add the kidney beans, black beans, diced tomatoes, corn, broth, chili powder, cumin, smoked paprika, and cayenne pepper (if using).

    • Stir gently to combine.

  4. Cook the Chili (Chunky Mode):

    • Select the "Chunky" function one more time and let it cook for 28 minutes to allow the flavors to meld together.

  5. Final Touches:

    • Taste and adjust seasoning with salt and black pepper as needed.

  6. Serve:

    • Ladle the chili into bowls and top with your favorite toppings, such as shredded cheese, sour cream, cilantro, avocado, or tortilla chips.

Tips:

  • For a thicker chili, use the "Blend" function for a few seconds to partially puree some of the beans and vegetables.

  • If you prefer a vegetarian version, skip the meat and add extra beans or diced vegetables like zucchini or mushrooms.

  • Make it spicier by adding a diced jalapeño or a dash of hot sauce during the cooking process.

With your 4-function Soup Maker, making a flavorful and hearty Mexican chili is a breeze. This dish is perfect for feeding a crowd or meal prepping for the week. Enjoy the warmth and spice of this delicious chili! 🌶️🍲
