Ingredients:

  • 2 Cornish hens (about 1-1.5 pounds each)
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 1 lemon, sliced
  • Fresh herbs (such as rosemary, thyme, and parsley)
  • 4 tablespoons unsalted butter, divided
  • Olive oil for searing (optional)

Equipment:

  • Sous vide immersion circulator
  • Large pot or container for water bath
  • Vacuum sealer and bags or high-quality resealable plastic bags
  • Skillet (if searing after cooking)

Instructions:

1. Prepare the Sous Vide Setup:

  • Fill a large pot or container with water and attach your sous vide immersion circulator. Preheat the water to 160°F (71°C).

2. Season the Cornish Hens:

  • Pat the Cornish hens dry with paper towels.
  • Season the hens generously with salt and pepper, both inside and out.

3. Add Aromatics:

  • In each cavity of the hens, place half of the minced garlic, a couple of lemon slices, and a few sprigs of fresh herbs.

  • Cook for 4 to 6 hours. The sous vide method ensures the hens will be tender and juicy regardless of the exact cooking time within this range.

6. Finish the Hens:

  • Once cooking is complete, remove the bags from the water bath and carefully take out the hens.
  • Pat them dry with paper towels to remove excess moisture—this is crucial for achieving a good sear.

Optional: Sear for Crispy Skin

  • Heat a skillet over medium-high heat and add a drizzle of olive oil.
  • When the oil is hot, add the hens, breast side down, and sear for 2-3 minutes on each side or until the skin is golden brown and crispy. You can also use a kitchen torch to crisp the skin if preferred.

7. Serve:

  • Let the hens rest for a few minutes after searing.
