Ingredients:

  • 2 lb flank steak: A lean and tender cut that's perfect for grilling.
  • Chimichurri spice mix: A blend of spices typically including cumin, coriander, paprika, and other herbs.
  • 2 tablespoons olive oil: For brushing on the steak and vegetables.
  • Salt: To taste, for seasoning.
  • Assorted vegetables: Sliced zucchini, bell peppers, cherry tomatoes, mushrooms, or any other vegetables you prefer.

Equipment:

  • Homtone pizza oven with grill function.
  • Reversible Grill/Griddle.
  • Tongs or oven mitts for handling hot trays.
  • Meat thermometer for checking the steak's internal temperature.
  • Serving plate.

Instructions:

Step 1: Preheat the Oven

  1. Select Steak Level: Set your oven to the steak function and choose the desired level of doneness (30% for medium rare, 50% for medium, 70% for medium well, 100% for well done).
  2. Preheat: The oven will automatically start preheating to the appropriate temperature.

Step 2: Prepare the Steak

  1. Pat Dry: Remove the steak from the refrigerator and let it sit at room temperature for about 30 minutes. Pat dry with paper towels to remove excess moisture.
  2. Season: In a shallow dish, combine olive oil, chimichur spice mix, and salt. Rub this mixture all over the steak to coat evenly.

Step 3: Grill the Steak

  1. Grill: Once the oven beeps indicating it's preheated, carefully place the steak on the baking sheet or tray.
  2. Cook: Grill the steak for 2-2.5 minutes, flipping the steak halfway through the cooking time to ensure even cooking. The exact time will depend on your desired level of doneness.

Step 4: Prepare and Grill the Vegetables

  1. Toss Vegetables: In a large bowl, toss the sliced vegetables with olive oil, a sprinkle of salt, and a pinch of chimichurri spice.
  2. Add to Grill: During the last 10 minutes of the steak's cooking time, add the vegetables to the grill.

Step 5: Check Doneness and Rest

  1. Check Doneness: Use a meat thermometer to check the internal temperature. For medium-rare, aim for an internal temperature of 130-135°F (54-57°C).
  2. Rest: Remove the steak and vegetables from the oven and let the steak rest for 5-10 minutes to allow the juices to redistribute.

Step 6: Serve

  1. Slice and Serve: After resting, slice the steak against the grain. Serve the steak and vegetables on a plate.
  2. Garnish: If desired, drizzle extra chimichurri sauce over the steak and vegetables before serving.

Tips for Steak with Chimichurri and Vegetables:

  • Steak Selection: Flank steak is a lean cut that's perfect for grilling. It's flavorful and becomes tender when cooked to medium-rare.
  • Resting: Always let steak rest after grilling to ensure the most tender and juicy result.
  • Vegetable Cooking: Roasting vegetables at a slightly higher temperature ensures they get crispy on the outside while remaining tender inside.
  • Oven Temperature: Keep an eye on the steak to ensure it doesn't burn. You may need to adjust the time slightly depending on your oven.
