Ingredients:

  • 2 lb beef steak (sirloin, ribeye, or strip): Choose a cut that's at least 1-inch thick to ensure even cooking.
  • 2 tablespoons olive oil: For brushing on the steak and enhancing flavor.
  • 1 tablespoon dried herbs (thyme, rosemary, parsley): For a rich, aromatic flavor.
  • Salt and pepper: To taste, for seasoning.
  • 4 tablespoons butter, softened: For making the herb butter topping.
  • 2 cloves garlic, minced: Adds a savory note to the herb butter.

Equipment:

  • Homtone pizza oven with steak function.
  • Reversible Grill/Griddle.
  • Tongs or oven mitts for handling hot trays.
  • Meat thermometer for checking the steak's internal temperature.
  • Serving plate.

Instructions:

Step 1: Preheat the Oven

  1. Select Steak Level: Set your oven to the steak function and choose the desired level of doneness. For medium-rare, select the 30% setting.
  2. Preheat: The oven will automatically start preheating to the appropriate temperature.

Step 2: Prepare the Steak

  1. Pat Dry: Remove the steak from the refrigerator and let it sit at room temperature for about 30 minutes. Pat dry with paper towels to remove excess moisture.
  2. Season: In a shallow dish, combine olive oil, dried herbs, salt, and pepper. Rub this mixture all over the steak to coat evenly.

Step 3: Roast the Steak

  1. Place in Oven: Once the oven beeps indicating it's preheated (the high temperature is reached), carefully place the steak on the baking sheet or tray.
  2. Roast: The oven will roast the steak for a preset time based on your selected level of doneness. For medium-rare, it typically takes about 1.5 minutes.
  3. Check Doneness: Use a meat thermometer to check the internal temperature. For medium-rare, aim for 130-135°F (54-57°C).

Step 4: Prepare the Herb Butter

  1. Mix Ingredients: In a small bowl, combine the softened butter, minced garlic, and a pinch more of dried herbs.
  2. Set Aside: Keep the herb butter at room temperature until ready to use.

Step 5: Rest and Serve

  1. Rest: Remove the steak from the oven and let it rest on a cutting board for 5-10 minutes to allow the juices to redistribute.
  2. Top with Herb Butter: After resting, slice the steak against the grain. Top each slice with a spoonful of herb butter.
  3. Serve: Transfer the steak to a serving plate and enjoy immediately.

Tips for Classic Roast Steak with Herb Butter:

  • Steak Selection: Sirloin, ribeye, and strip are all excellent choices for roasting. They have good marbling and flavor.
  • Resting: Always let steak rest after roasting to ensure the most tender and juicy result.
  • Butter Consistency: The herb butter should be soft and spreadable. If it's too hard, let it soften a bit at room temperature.
