Ingredients:

  • 1 eggplant: Choose a fresh, firm eggplant for the best texture.
  • 1 cup breadcrumbs: You can use plain or seasoned breadcrumbs for added flavor.
  • 1 egg, beaten: For coating the eggplant slices.

Equipment:

  • Your compact pizza oven with manual function.
  • Baking sheet or enameled baking tray that fits within your oven (13.4" x 13.4").
  • Tongs or oven mitts for handling hot trays.
  • A shallow dish for the egg wash.
  • A plate or tray for coating the eggplant.
  • Serving plate.

Instructions:

Step 1: Preheat the Oven

  1. Preheat: Set your oven to the MANUAL function at 425°F (218°C). This temperature will ensure the eggplant fries get crispy without burning.

Step 2: Prepare the Eggplant

  1. Slice Eggplant: Using a sharp knife, slice the eggplant into thin, even rounds about 1/4-inch thick.
  2. Salt: Lightly salt the eggplant slices to draw out any excess moisture and enhance flavor.

Step 3: Coat the Eggplant

  1. Prepare Coating Stations: In one shallow dish, beat the egg. In another shallow dish, spread the breadcrumbs.
  2. Coat Eggplant: First, dip each eggplant slice into the beaten egg, ensuring it's fully coated. Then, dredge in the breadcrumbs, pressing gently to adhere.

Step 4: Arrange on Baking Sheet

  1. Prepare Baking Sheet: Lightly grease the baking sheet or line it with parchment paper.
  2. Place Coated Eggplant: Arrange the coated eggplant slices in a single layer on the baking sheet, ensuring they don't overlap.

Step 5: Bake the Eggplant Fries

  1. Bake: Place the baking sheet with the eggplant in the preheated oven and bake for 15-20 minutes, or until the eggplant is cooked through and the coating is golden brown and crispy.

Step 6: Serve

  1. Cool: Remove the eggplant fries from the oven and let them cool for a minute or two to allow any residual heat to dissipate.
  2. Serve: Transfer the baked eggplant fries to a serving plate and enjoy immediately.

Tips for Baked Eggplant Fries:

  • Eggplant Selection: Choose eggplants that are firm and without blemishes for the best texture.
  • Coating: Make sure each piece is well-coated in both the egg and breadcrumbs for an even crust.
  • Baking Time: Keep an eye on the eggplant fries as they bake to prevent overcooking. The exact time may vary slightly based on your oven.
  • Storage: Store leftovers in an a sealed container at room temperature for up to 3 days.
