Ingredients:

  • 2 lb beef steak (sirloin, ribeye, or strip): Choose a cut that's at least 1-inch thick for even cooking.
  • 2 tablespoons olive oil: For brushing on the steak and potatoes.
  • 1 tablespoon dried herbs (thyme, rosemary, parsley): For a rich, aromatic flavor.
  • Salt and pepper: To taste, for seasoning.
  • 4 medium potatoes: Peeled and quartered.
  • 2 cloves garlic, minced: Adds a punch of flavor to the steak and potatoes.

Equipment:

  • Homtone pizza oven with steak function.
  • Reversible Grill/Griddle
  • Tongs or oven mitts for handling hot trays.
  • Meat thermometer for checking the steak's internal temperature.
  • Serving plate.

Instructions:

Step 1: Preheat the Oven

  1. Select Steak Level: Set your oven to the steak function and choose the desired level of doneness (30% for medium rare, 50% for medium, 70% for medium well, 100% for well done).
  2. Preheat: The oven will automatically start preheating to the appropriate temperature.

Step 2: Prepare the Steak

  1. Pat Dry: Remove the steak from the refrigerator and let it sit at room temperature for about 30 minutes. Pat dry with paper towels to remove excess moisture.
  2. Season: In a shallow dish, combine olive oil, dried herbs, salt, and pepper. Rub this mixture all over the steak to coat evenly.

Step 3: Prepare the Potatoes

  1. Toss Potatoes: In a large bowl, toss the quartered potatoes with olive oil, minced garlic, salt, and pepper until evenly coated.

Step 4: Roast the Potatoes

  1. Place Potatoes in Oven: Spread the potatoes evenly on the baking sheet or tray.
  2. Roast: Roast the potatoes at 400°F (204°C) for about 20 minutes, or until they are tender and slightly crispy.

Step 5: Roast the Steak

  1. Place Steak in Oven: Once the oven beeps indicating it's preheated, carefully place the steak on the baking sheet or tray.
  2. Roast: The oven will roast the steak for a preset time based on your selected level of doneness. For medium-rare, it typically takes about 2 minutes.
  3. Check Doneness: Use a meat thermometer to check the internal temperature. For medium-rare, aim for 130-135°F (54-57°C).

Step 6: Rest and Serve

  1. Rest: Remove the steak from the oven and let it rest on a cutting board for 5-10 minutes to allow the juices to redistribute.
  2. Top with Herb Butter: After resting, slice the steak against the grain. Top each slice with a spoonful of herb butter made from softened butter, minced garlic, and dried herbs.
  3. Serve: Transfer the steak and roasted potatoes to a serving plate and enjoy immediately.

Tips for Garlic Herb Steak with Roasted Potatoes:

  • Steak Selection: Sirloin, ribeye, and strip are all excellent choices for roasting. They have good marbling and flavor.
  • Resting: Always let steak rest after roasting to ensure the most tender and juicy result.
  • Potato Cooking: Roasting potatoes at a slightly higher temperature ensures they get crispy on the outside while remaining tender inside.
